Something non-traditional to eat around the holidays
Christmas is just around the corner – a time where we know we are going to eat LOTS of delicious traditional foods. Our Home Chef box came last Friday, and in it was something very NON-traditional for our American Christmas holiday – Teriyaki-Sriracha Chicken Stir Fry with brown rice and zucchini – so we thought we would give that a try.
As usual, the meal card was colorful and informative, and the bag of non-meat ingredients was nicely done! This meal falls into a new category, “15-Minute Meals,” that Home Chef recently introduced. A 15-minute meal had HUGE appeal the week before Christmas, with all of the crazy prepping for a long weekend with a houseful of guests.

Once I saw all of the items in the bag, I reviewed the back of the recipe card where Home Chef lays out the step-by-step instructions. I first needed to slice the zucchini and prep the green onions. The onions needed to be chopped two different ways. (Pardon the old, discolored cutting board. It’s definitely clean but has been used A LOT!)
Now the Chicken
I then needed to cube the chicken. Home Chef sends quality, proportionally-sized meat for their meals, and this was no exception. Here is the chicken, cubed and ready to go into the skillet.
I seasoned the chicken and began cooking per the instructions. Next, I added the zucchini and onions to the skillet.
After a few minutes, the chicken, zucchini, and onions were all cooked and ready for the rice and teriyaki sauce to be added. Easy peasy!
Time to Eat!
Now the fun part. I added SOME of the sriracha to the recipe, but my palate is much more sensitive to spicy foods than James’ is, so I erred on the side of caution. 🙂 Photos of our two bowls of the completed dish – topped off with wonton strips – are below. So yummy! You’ll notice the first bowl is missing the sprinkling of red that is present on the second one. Guess which bowl belonged to which one of us?!?
This meal definitely met our expectations – both in the prep-time and in the flavor of the finished dish. We would give this one a solid 9 out of 10.
